Healthy Eating: Thai Green Squid and Shrimp (Good Friday Appropriate)

I love seafood and Asian cuisine, so this is one of my favourite meals I’ve had lately!  To make this a healthy low carb meal, I skip the rice or noodles with these meals and just load up with the good stuff!

INGREDIENTS:

300g Squid Rings (I buy mine frozen in an Asian Supermarket)
250g Shrimp
2 Spring Onions (Chopped Finely, separated into Green and Whites)
2 Garlic Cloves chopped finely
1 Green Pepper
Mushrooms
1 Red Chilli
Lime
For Sauce: I’m very naughty, I don’t do it from scratch so I use Thai Green Curry Paste and a can of Light coconut milk.  Alternatively, you can actually buy the sauce ready-made too.

METHOD:

  • Use a little sesame oil in a wok, add tbsp. of curry paste and sauté the whites of the spring onion for about a minute.
  • Add the Garlic and the squid and cook for about 3 minutes, then add the green peppers and mushrooms.
  • Add the Coconut milk and allow it to simmer, then add the shrimp and the greens of the spring onions.  Wait until it’s piping hot and then serve!

As I don’t eat rice or noodles, I don’t use all the liquid!  I served this on a little bit of Chinese Cabbage with a slice of lime and some chopped red chilli!
