Healthy Eating: Low Carb Dinner Idea – Chicken Satay Skewers!

This is a delicious summer meal, which goes really well with a salad and a side of Guacamole.  (Mix-and-match, I know!)  They also work really well on a BBQ!
Low Carb Chicken Satay

3 Tablespoons of No Added Sugar Peanut Butter
½ Cup Low Sodium Soy Sauce
½ Cup Lime Juice
2 Tablespoons Curry Powder
2 Finely Chopped/Crushed Garlic Cloves
Pinch of Cumin
Pinch of Salt
2 Large Chicken Breast Fillets
Wooden Skewers (Soak in Water beforehand to prevent them from burning – I didn’t soak mine enough this time oops!)


The first thing to do is make your Satay Sauce – so combine all ingredients into a smooth paste.

Next, I like to do this bit just because it’s fun – bash the chicken fillets with a rolling pin or meat mallet until they’re flat!

Then, cut the fillets length ways into strips.

Put 2/3 of your Satay Sauce into a bowl, add the chicken strips and coat them well.  Then, thread the chicken onto your skewer and make ‘S’ shapes as you go.

Leave the chicken to marinade before cooking – I give it at least an hour.

To cook them, I use the grill on the highest setting, and constantly turn them until they’re fully cooked through. (8-10 minutes)
