Healthy Eating: Guacamole – A Low Carb Snack or Side

Guacamole Recipe

Avocado is full of healthy monounsaturated fat and potassium – so it makes you feel super satisfied after eating!  This is a great side if you’re on a low-carb diet or you’re just eating clean!

I’m sharing this ‘family’ recipe for super yummy Guacamole (the way it was made at home).  Just make sure you ditch the chips if you’re eating it as a dip, and replace with veggie sticks!

Ingredients:

1 Ripe Avocado (It should feel soft when you squeeze the skin)
2 Spring Onions
2 Tomatoes
½ Large Green Pepper
1 Green Chilli (de-seeded if you’re not a fan of spicy food)
1 Lime / Lemon Juice
Salt

Method:

Cut the Avocado in half, remove the seed and scoop the inside out into a bowl.  Using a fork, mash the Avocado up.  Squeeze half the lime into the bowl.

Dice Tomatoes and Green Pepper into small cubes.  Slice the Spring Onions and Chilli finely.

Sprinkle salt over the veggies and add one ingredient to the bowl at a time, stirring your avocado mixture in between. (I find this mixes a lot more evenly)

After everything is mixed up, taste it.  I like to get the perfect balance of lime/lemon and salt.  If it tastes too lemony add more salt and vice versa!

Cover the bowl and refrigerate until you need it!
